Beech Hill Cracked Pepper Bison Brisket
-4-5 lbs bison brisket
-coarsely ground black pepper
-2/3 cup soy sauce
-1/2 cup vinegar
-1 T. catsup
-2 tsp. minced garlic
Spread cracked pepper on waxed paper. Place brisket on top of the pepper and turn over to coat all sides. Place brisket in a shallow dish.
Mix soy sauce, vinegar, catsup and garlic in a bowl. Pour over brisket. Cover and refrigerate in marinade overnight. Turn meat at least once.
To cook in slow cooker: Place brisket in the slow cooker pot. Pour marinade over the meat. Set on low for about 4-6 hours. The meat should be very tender. Watch that all liquid does not dry up. I have often left my slow cooker on “keep warm” if I am to be away from the house for several hours and turn it up when I return so as not to have the pot dry out.
To cook in the oven: Place brisket in a shallow baking dish and pour marinade over it. Cover with foil and fold to seal. Bake at 300° for about 2 ½ to 3 hours or until tender..
