BUFFALO MEAT RECIPES
Beech Hill Bison Stir-Fry Szechuan Style
-1 lb. top sirloin cut into pieces, kabobs, or end cuts
-2 large carrots diagonally sliced
-1 ½ cups fresh broccoli
-1 medium onion chopped
-1 clove garlic chopped fine
-1 cup of water
-4 T. soy sauce
-2 T. cornstarch
-red pepper flakes
-2 T. olive oil
-1/4 cup unsalted peanuts
-cooked rice
Stir together 1 tablespoon of the cornstarch, 1 tablespoon of soy sauce and the garlic in medium bowl. Add the bison meat and stir to coat. Set aside.
Mix together water, 3 tablespoons of soy sauce, 1 tablespoon of cornstarch and red pepper flakes in a separate bowl and set aside.
Heat 1 tablespoon of oil in large frying pan or wok over high heat. Add meat mixture and stir-fry about 2 minutes. Stir constantly. Remove and set aside.
Heat remaining oil in frying pan. Add carrots, broccoli and onions and stir-fry for about 3 minutes. Return bison to pan and add soy sauce mixture. Cook until sauce thickens. Sir in peanuts and serve immediately over rice.
